
THE BEST CHOCOLATE PUDDING EVER - WITH AVOCADOS!

If you asked me 'Chocolate Ganache or Fruit Sorbet?', my mouth would immediately begin to water with the first word - chocolate! Jodi, Laughter Catalyst at LOTUSWEI, has the best healthy chocolate pudding recipe you will ever get your hands on. It's main ingredient? AVOCADOS!
Here's what Jodi says:
When I first became a raw foodie, I basically lived off of this chocolate pudding. Sounds ridiculous, I know. But it is actually good for you! Loaded with healthy fats + essential nutrients, you can finish a bowl of this pudding while feeling 100% guilt free.
YOU WILL NEED:
- 6 Avocados
- 1.5 - 2 cups Coconut Milk (or your milk of choice)
- 2 cups Cacao
- 1/2 teaspoon Sea Salt
- 3/4 cup Raw Honey
- 2 dropperfuls of Inner Peace Flower Elixir (or your elixir of choice)
- Bar of Wei of Chocolate - shave chocolate on top, use as a spoon or add chocolate chunks to the pudding
- Food Processor
* Recipe generously feeds 4 people with overflowing bowls of peaceful pudding.

DIRECTIONS:
1. Blend 6 avocados in your food processor until creamy. Make sure you keep your avocados cool as they are blending - don't let the food processor heat things up. Avocados tend to overpower the dish once they are heated up (and trust me, you'll want to taste the chocolate).
2. Add coconut milk and blend the mixture until it is smooth. Once nice and silky, add the cacao and blend until creamy. Keep adding small amounts of milk until you're satisfied with the consistency.
3. Add sea salt + raw honey. If it is too salty for you, add more honey. Too sweet? More salt!
4. Add in your flower elixir of choice. We used Inner Peace and after our pudding party at the office, we all went back to work with peaceful hearts + fresh perspectives.
5. If you want to double down on the chocolate, reach for a bar of Wei of Chocolate and you've got options: melt it and drizzle it on top of the pudding. Chop it into chunks and stir into the pudding. Shave some chocolate on top with heavy whipped cream. Or simply use it as a spoon, lol.
What I love about this recipe is you can get real crazy with it...
- Blend in sliced bananas or strawberries for a little fruity flavor and added texture.
- Whip up a chocolate ganache or frosting for a cake by adding in less coconut milk. Or add it to a pie crust and call it a pudding pie! If your raw honey has a tough consistency, that will also thicken things up.
- Make a smoothie by adding in more coconut milk and fruit (frozen, or throw in some ice!).
