Roasted Cherry Cardamom Popsicles

Summer is the time for cool icy treats, like popsicles and we’ve elevated ours with juicy organic cherries, spicy cardamom and a hint of sweet honey. These Roasted Cherry Cardamom popsicles are sure to be a serious game changer for your summertime sweets.

Ingredients {makes 10 popsicles}
  • 2 cups cherries
  • 1 ¼ cup full fat coconut milk
  • ⅓ cup honey + 2 tbls
  • ½ tsp ground cardamom
  • ¼ tsp vanilla bean paste
  • pinch Himalayan sea salt
  • Your favorite flower elixir
MATERIALS
  • Glass  jar
  • Popsicle mold
  • Popsicle sticks
METHOD
  1. Preheat oven to 350 degrees F and prepare a baking sheet with parchment paper. Clean and remove pits from cherries and place in a small bowl.  Add Cardamom and 2 tablespoons honey to the cherries and mix until well coated. Pour cherries onto the prepared baking sheet and roast in your preheated oven for 15 minutes, stirring halfway through.
  2. Remove roasted cherries from the oven and allow to cool completely. While cherries are cooling, prepare the popsicle base.  To your blender, add coconut milk, ⅓ cup honey, vanilla bean paste, sea salt and your favorite flower elixir. We used Gamechanger, but we’re also loving our new Boundless Wisdom right now.  Blend until ingredients are well combined.
  3. Once cherries have cooled give them a rough chop, setting some aside before adding to your coconut milk base. Blend cherrie until the popsicle mix is to your desired consistency.
  4. Pour popsicle mix into a glass storage jar and place in the refrigerator overnight.
  5. The next day, give your mix a good stir and prepare your popsicle molds.  You’ll want to add some of the cherries you set aside to each mold, then fill with the mixture.
  6. Place your molds in the freezer for about an hour, then remove and add your popsicle sticks.
  7. Put molds back in the freezer overnight.
  8. Remove popsicles from their molds and enjoy!
