QUICK + FUN OAT BASED RECIPES

I love recipes that are quick, easy + nutritious! One of my go-to ingredients are oats since they’re an awesome source of fiber, protein + antioxidants. I stick to a fairly plant-based diet, so these options are perfect!

Banana Date Cookies

  • 2 bananas
  • 5 large medjool dates
  • 2 cups gluten free rolled oats
  • dash of cinnamon
  • dash of pink himalayan salt

Before you start to make these delicious “cookies”, preheat the oven to 350°. Grab a large bowl and begin to mash up the bananas with a fork until they’re nice + smooth. Blend up 2 cups of oats in a food processor + add that to the bananas. Gather your dates + cut them into small chunks. When you’re happy with the size, add them into the banana oat mixture. Sprinkle a little bit of cinnamon + salt (if you want).

Start forming the dough into golf ball sized balls + slightly flatten them onto a cookie sheet. Keep in mind, these are meant to be on the thicker side. All together, you should have about 10-12 cookies. Bake them for about 15-17 minutes!

Let the cookies cool + store them in an airtight container. They can be kept out on the counter for the first two days, after that you should store them in the fridge!

These are perfect for satisfying your sweet tooth or a quick snack to grab when you’re running out the door!

Overnight Oats

Night before:

  • ½ cup rolled oats
  • 2 tablespoons ground flax seeds
  • ¾ unsweetened almond milk
  • ½ banana

Morning:

  • ½ banana
  • drizzle of pure maple syrup if desired

Grab a mason jar and fill it with the oats, flaxseed + banana. Add the almond milk, screw the lid on + place it in the fridge overnight! In the morning, add the other ½ of your banana + a tiny bit of maple syrup if you want it to be a little bit sweeter! But leaving bananas in overnight will add it’s own natural sweetness to it!

Feel free to change up any of the extra goodies. You can add chia seeds, other fruit, cocoa powder ~ anything! The possibilities are endless.

Banana Pancakes

  • 1 banana
  • 2 eggs
  • 1/3 cup oats
  • dash of cinnamon

Mash up the banana in a large bowl as much as possible! Add the eggs + whisk away. Blend up the oats until they become a fine powder. Mix that into the banana + eggs. {Sometimes, I’ll just put the all ingredients in a blender! ~ the pancakes will be a little bit thinner, but will have a more standard consistency.} Add your favorite oil to a pan + make your pancakes! These topped with fruit + pure maple syrup is breakfast HEAVEN.
